I had the pleasure of working with Koia on recipe development for their new line of vegan + keto shakes!
These super guilt free donuts were so much fun to make but are also one of my favorite photoshoots I've ever done.
I love how everything turned out and I'm excited I finally get to share them here!
Birthday Cake Keto Donuts
1 cup almond flour
2 tbsp flax seed meal
1 tsp xanthan gum
1 tsp baking powder
4 tbls nut butter of choice
2 tbls oil of choice (coconut, avocado)
¾ cup Birthday Cake Koia
⅔ tsp vanilla extract
Birthday Cake Glaze:
4 tbls Birthday Cake Koia
3 tbls of coconut butter
*Optional freeze dried fruit for sprinkling
Preheat oven to 350 degrees.
Combine all dry ingredients into a bowl
(almond flour, flax seed meal, xanthan gum, baking powder)
In a separate bowl, combine nut butter of choice and oil.
Melt in the microwave in intervals of 10 seconds, stirring in between until nicely blended together.
Add Birthday Cake Koia + vanilla extract to the melted almond butter and oil mixture.
Pour the wet ingredients into the dry ingredients and mix well until you have a sticky batter.
Grease donut pan or (cupcake pan) and fill with batter.
Bake 15-20 minutes.
Let donuts cool before glazing.
Melt in the microwave in 10 second intervals, stirring in between until nicely blended together.
Dip cooled donuts in glaze and sprinkle with optional freeze dried fruit for color.
Makes 6 donuts.
