Superfood Trail Mix Granola Bars

Good luck not eating these constantly. 

I didn't stand a chance.

It's like a peanut buttery cinnamon no bake cookie.

 

 

 

 

Superfood Trail Mix Granola Bars

  • 2 cups oats

  • 1/2 cup flax meal

  • 1 tsp cinnamon

  • 1/2 cup dried cranberries

  • 1/2 cup dried cherries

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup pecans, chopped

  • 1 tbs almond slivers

  • 1 tbs hemp seeds

  • 1/2 tsp sea salt

  • 1 tbs sesame seeds

  • 1 tsp vanilla

  • 1 1/2 tbs coconut oil, melted

  • 1/3 cup peanut butter

  • 1/2 cup brown rice syrup OR maple syrup OR honey

OPTIONAL:

  • 1/4 cup of chocolate chips :)

DIRECTIONS:

Add all the dry ingredients into a bowl.

Add all the wet ingredients into a separate bowl [ coconut oil, peanut butter, syrup, vanilla]

and melt in the microwave. About 30-45 seconds.

Pour melty goodness over the dry ingredients and stir until everything is coated.

Put in baking dish and let it set in the fridge before cutting.

 

9x11 dish

Keep in the fridge for extra freshness.

 

NOTE:

I used maple syrup in my first batch and they were, while delicious, crumbly.

Brown Rice Syrup helps them sturdy up a bit.
