Classic Mediterranean Hummus

 Every time I make hummus at home, I kick myself for all the tubs I've bought.

I have a tendency to over complicate things.

As we all know to so well, simple is usually better.

This hummus is no exception.

 

 

Classic Mediterranean Hummus

  • 1 can of chickpeas, rinsed [keep the chickpea juice!]

  • 1 lemon, juiced

  • 1/4 cup [heaping] tahini

  • 1 tbs of EVOO

  • 1 tbs of Garlic EVOO [can sub a clove of garlic]

  • 1 tbs Walnut oil [can sub out for regular olive oil]

  • 1/4 + more cup of aquafaba [left over chickpea can juice]

 

Optional but amazing toppings:

 

  • Za'atar seasoning [found at whole foods]

  • Grilled marinated artichokes

  • Olive oil

  • Kalamata olives

  • Pine nuts or Sunflower seeds

  • Sesame Seeds

 

 

 

Throw everything into a food processor. 

Use more aquafaba to thin out the hummus if needed.

Blend until desired consistency
